L’Osteria della Trippa’s renovation was essentially an intervention of subtraction with the intention of distilling a contemporary paradigm of the Roman osteria. This quintessential venue has been in business for almost a decade: a rare example of an authentic Roman restaurant serving uncommon traditional delicacies, led by a welcoming host and fundamentally a trustworthy meeting place. Amidst the unforgiving trend of tourist-oriented eateries, it was already a hidden gem. The foremost intent of the project was not only to conserve these aspects, but to accentuate them as well. L’Osteria della Trippa offers fresh contemporary comfort while retaining it’s old world soul.
